Sous Chef, Garde Manger

About the role

The Loews Arlington Hotel and Convention Center, a full-service resort with five restaurants and lounges, is hiring a Sous Chef, Garde Manger. The role maintains kitchen staffing levels and oversees the smooth, efficient and cost-effective operation of cold food production, including labor management, inventory control and sanitation compliance.

Key responsibilities

• Maintain restaurant kitchen staffing levels and supervise food production of hot and cold items
• Ensure standardized recipes, plating, portion control and garnish requirements are followed
• Order raw ingredients, check their receipt and storage, and monitor holding and storage operations against food service sanitation standards
• Inspect preparation and cooking equipment regularly and report maintenance needs to Engineering
• Supervise kitchen opening and closing, and interview, train, appraise and coach team members
• Review daily payroll reports, control labor costs, and evaluate individual performance
• Stay informed through hotel meetings and communicate daily with the team and other departments

Required profile

• Five to six years of experience in quality food production in an upscale hotel or freestanding restaurant
• Two plus years of supervisory experience in quantity food production
• College degree preferred
• ACF certification as "Sous Chef" or a culinary degree from a recognized culinary institute and equivalent experience
• Ability to speak, read and write English and to work flexible hours including weekends and holidays
• Able to lift 50 pounds and push carts up to 200 pounds

• Excellent culinary skills and knowledge of food production techniques

• Knowledge of kitchen equipment use and operation
• Management, organizational, communication and leadership skills
