Line Cook - Pizza Station

About the role

Alvarado Street Brewery & Bistro is looking for a Line Cook for its Carmel location, reporting to the Chef de Cuisine. The role produces hot and cold food to the standards set by the executive chef and sous chef, working on the pizza station where you prepare and bake pizza dough. It is an hourly full-time position.

Key responsibilities

• Prepare menu items such as soups, sauces and salads as directed by the chefs, following recipes and portion control guidelines
• Prepare and handle pizza dough, select toppings and cook in a pizza oven
• Time cooking so that entrees from each order finish at the same time
• Add garnishes and arrange cooked food attractively on plates
• Discuss daily events and the production schedule with the chefs and suggest improvements to food quality and presentation
• Maintain consistent product, portions, cuts and amounts, and check the quality of food at the station
• Contribute to the daily food order list, rotate food in coolers and dry storage to reduce waste, and set up the workstation
• Keep the kitchen clean and orderly, and comply with safety, health and hygiene policies

Required profile

• High school diploma or equivalent
• At least 1 year of culinary experience in a restaurant, resort or hotel
• Valid ServSafe food handling certification
• Able to stand and work on your feet for long periods, lift up to 50+ pounds and work in a busy, sometimes noisy and slippery kitchen

Required skills

• Hot and cold food preparation and sanitation
• Good knife skills
• Pizza making is a plus
