Director of Outlets

About the role

The Loews Vanderbilt Hotel in Nashville is hiring a Director of Outlets for its Food and Beverage Division. The role works with department managers to set staffing needs, approves their policies and procedures, and manages all food and beverage outlets, including menu development, inventory control and pricing.

Key responsibilities

• Work with department managers to establish staffing requirements for all departments within the Food and Beverage Division
• Approve policies and procedures developed by the respective managers for the operation of the food and beverage outlets
• Interview, select, train, appraise, coach, counsel and discipline food and beverage management personnel according to Loews standards
• Evaluate employee performance, set goals, objectives and training needs, and coach and retrain personnel as needed
• Manage inventory control and pricing of all food and beverage menus
• Work with the Purchasing Manager, Executive Chef and outlet managers to set par levels for inventory
• Ensure security and proper control of operating supplies and equipment
• Improve existing menus and develop new ones in line with hotel standards
• Execute emergency procedures, attend required hotel meetings and training, and notify management of significant issues

Required profile

• Bachelor's degree or higher in Food Service Management, Culinary Arts or Hospitality Management, preferred
• Three to five years of progressive management experience in a large, upscale, high-volume, multi-outlet hotel environment; prior Director experience preferred
• Valid TABC permit
• Flexible schedule including weekends and holidays

Required skills

• Thorough knowledge of food and beverage planning, production, presentation and service
• Ability to create new menu selections that fit restaurant themes and group functions
• Effective management, leadership, organizational and communication skills
