Cook II - Nautilus

About the role

The Loews Miami Beach Hotel, a reimagined oceanfront resort in South Beach, is hiring a Cook II for its Nautilus restaurant. The hotel supports 790 guestrooms and suites, direct beach access, an oceanfront pool deck, Sea Spa, six restaurants and lounges, and more than 65,000 square feet of meeting space.

Key responsibilities

• Set up and organize the work area with all necessary supplies and equipment.
• Receive, inspect and rotate food products to ensure fresh, high-quality ingredients.
• Prepare and store raw food products properly, following standardized recipes and portion-control guidelines to minimize waste.
• Plate cold foods according to presentation guidelines and monitor finished product so it is served promptly.
• Follow governmental food sanitation standards, monitor refrigeration and holding temperatures, and keep work surfaces clean and sanitized.
• Use knives, slicers, mixers, choppers and grinders safely, and report equipment malfunctions or safety hazards to the supervisor.
• Notify the Steward of dish needs and return cooking utensils to the pot wash area.
• Clean and break down the work area at the end of each shift, turn off equipment and secure the kitchen.
• Follow teamwork, safety, hygiene and uniform/grooming standards, attend training and meetings, and comply with emergency procedures.

Required profile

• High school diploma or equivalent.
• Post-secondary culinary training or certification as "Cook" from a recognized culinary school.
• One year of cooking experience in an upscale, high-volume hotel or freestanding restaurant, or equivalent.
• Knowledge of food service sanitation standards and of standard kitchen equipment.
• Able to stand, stoop, bend and lift up to 50 pounds; able to read, write and speak English.
• Able to work a flexible schedule including weekends and holidays.
