Cook II Garde Manger

About the role

Loews Miami Beach Hotel, a reimagined oceanfront resort in South Beach, is hiring a Cook II Garde Manger. The team supports 790 guestrooms and suites, direct beach access, an oceanfront pool deck, Sea Spa, six restaurants and lounges, and more than 65,000 square feet of meeting space.

Key responsibilities

• Set up and organize the work area with all necessary supplies and equipment.
• Receive, inspect and rotate food products so that fresh, high-quality ingredients are used.
• Prepare and store raw food products properly, following standardized recipes and portion-control guidelines to minimize waste.
• Plate cold foods according to presentation guidelines and monitor finished products so they are served promptly.
• Maintain refrigeration and holding temperatures, clean and sanitize work surfaces, and wash hands frequently.
• Use knives, slicers, mixers, choppers and grinders safely, and report equipment malfunctions or safety hazards to the supervisor.
• Notify the steward of needed clean dishes and return cooking utensils to the pot wash area.
• Clean and break down the work area at the end of each shift, turn off equipment and secure the kitchen.
• Follow food sanitation standards, comply with safety regulations, attend training and meetings, and follow uniform and grooming standards.

Required profile

• High school diploma or equivalent.
• Post-secondary culinary training or certification as "Cook" from a recognized culinary school.
• One year of cooking experience in an upscale, high-volume hotel or freestanding restaurant, or equivalent.
• Knowledge of food service sanitation standards and of standard kitchen equipment.
• Able to stand, stoop, bend and lift up to 50 pounds; able to read, write and speak English.
• Able to work a flexible schedule including weekends and holidays.
