Cook I Garde Manger

About the role

The Loews Miami Beach Hotel, a renovated oceanfront property in South Beach, is hiring a Cook I Garde Manger. The role oversees the preparation and production of all cold food items and supervises pantry and prep personnel.

Key responsibilities

• Supervise and set up the work area with the necessary supplies and equipment
• Receive, inspect and rotate food products so only fresh, high-quality ingredients are used
• Supervise the preparation and storage of raw food before final assembly of cold items
• Ensure standardized recipes are followed and monitor plating against presentation guidelines
• Help pantry and prep staff complete their duties and notify the supervisor of equipment malfunctions or safety hazards
• Clean and break down the work area, return ingredients to storage and finish closing tasks at the end of each shift
• Follow general hotel standards: teamwork, guest courtesy, emergency procedures, safety regulations, cleanliness, recycling, training attendance, uniform and grooming standards

Required profile

• High school diploma or equivalent
• At least three years of cooking experience in an upscale, high-volume hotel or freestanding restaurant, or post-secondary culinary training with two years of hands-on experience
• Knowledge of food service sanitation standards and standard kitchen equipment
• Able to stand, stoop, bend and lift up to 50 pounds
• English reading, writing and speaking ability
• Flexible schedule including weekends and holidays
