Sous Chef - Loews Hotels Universal Orlando

About the role

Loews Hotels at Universal Orlando is looking for a passionate, driven Sous Chef for its restaurant. The Sous Chef acts as the right hand to the Executive Chef, ensuring flawless execution of daily kitchen operations and helping shape the culinary identity of the restaurant through seasonal menus and high standards of quality and safety.

Key responsibilities

• Oversee food preparation and presentation so every dish meets quality and aesthetic standards
• Train, mentor and schedule kitchen staff, fostering a positive and collaborative environment
• Help create seasonal menus and new dishes that fit the restaurant's concept and guest expectations
• Monitor compliance with health, safety and sanitation regulations; manage inventory, food costs and vendor relationships
• Work with service teams to accommodate dietary needs and resolve guest concerns
• Analyse feedback and work with the Executive Chef to refine processes
• Attend regular shifts, mandatory training and meetings, and perform other duties as assigned

Required profile

• 5 to 7 years of progressive culinary leadership experience in quantity food production, in an upscale hotel or freestanding restaurant
• Culinary degree or equivalent formal training preferred
• Ability to lift up to 50 lbs regularly
• Effective verbal and written communication in English with team members, leaders and guests
• Flexible schedule, including nights, weekends and holidays

Required skills

• Thorough knowledge of Food Service Sanitation Standards
• Excellent culinary skills and knowledge of food production techniques
• Experience with combination ovens, fryers, grills, griddles, food processors, mixers, slicers, steamers, sous vide machines and walk-in coolers
