Service Captain - Fine Dining Wine Service

About the role

The Greenbrier Hotel in White Sulphur Springs is hiring a Service Captain for its dining outlets. The role ensures every guest receives a five-star experience while embodying the brand's DNA, with oversight of the entire dining experience and wine service. It involves long hours in season, including weekends, holidays and nights.

Key responsibilities

• Proactively greet guests, escort them to their seats and offer chair assistance
• Present wine menus, take wine orders and recommend wines based on the food; serve wine by the bottle and by the glass
• Articulate wine service: name, vintage, region, grape variety, selection rationale, style and flavour profile
• Place orders into the Micros Point of Sale terminal and handle beverage and food orders
• Deliver bread and butter, place silverware, fire courses, clear courses, take dessert orders and make coffee, tea, espresso, cappuccino and latte
• Present checks and process payments, validate guest satisfaction and assist the dining team with the service script
• Report 86s to the Cellar Master, assist with inventory, ordering, wine list updates and maintenance, and handle wine properly
• Assist with wine tastings for special events and groups, and present menus and beverages
• Complete assigned side work, attend pre-shift meetings and training, and help colleagues when needed

Required profile

• High school diploma or G.E.D. preferred
• Court of Master Sommeliers certified sommelier or equivalent experience preferred
• At least one year of scrub/service captain experience, four or five star dining preferred
• Passed the Greenbrier Scrub Captain wine test or equivalent training; entry-level Master Sommelier or Certified Wine Specialist preferred
• Ability to pronounce food and beverage offerings correctly
• Physical ability to stand, walk, bend and lift up to 30 lbs frequently, with occasional heavier lifts

Required skills

• Point of Sale terminal experience
• Successful completion of the Menu Knowledge Test, Wine and Spirit Training and a practical service test
• Effective communication and teamwork
