Culinary Intern - Second Cook

About the role

The Greenbrier Hotel in White Sulphur Springs is looking for a Culinary Intern (Second Cook) within the Chef department. The purpose of the role is to help consistently provide a flawless dining experience with exceptional food, exquisite presentations and superlative service. The selected candidate will report to the Sous Chef.

Key responsibilities

• Prepare and cook all food items according to the menu and the prep-sheet specifications.
• Handle line assignments as scheduled, including station prep and station service.
• Manage mise en place.
• Check equipment condition and obtain the necessary utensils, tools and supplies.
• Prepare the show plate before each dinner service and close the station properly.
• Complete assigned tasks, follow directions and handle guest interaction, ordering, clean-up and clerical duties.
• Work shifts as required, including evenings and days.

Required profile

• Previous experience as a cook in a similar fine-dining environment.
• High school diploma or G.E.D. plus 3 years of experience in an equivalent food-production operation; alternatively, an A.O.S. or A.S. degree in Culinary Arts or completion of a 3-year Pro-Start program plus 3 years of equivalent experience.
• Fluent reading, writing and speaking of English.
• A West Virginia Food Handlers card.
• Flexibility and teamwork, and the ability to uphold the hotel's vision and its 12 values.
