Sushi Cook – Culinary Team

About the role

The Sushi Cook will join the Food and Beverage Culinary Department at the Summit Club, located just outside Las Vegas, NV. You will craft fresh fish dishes for members and guests while supporting the Sushi Chef to ensure consistent quality and presentation.

Key responsibilities

• Assist members and guests with any issues in a courteous manner.
• Prepare sushi items to the highest standards of taste and presentation.
• Maintain sushi menu standards and ensure accurate spot checks.
• Forecast daily business needs, manage inventory, and minimize waste.
• Complete cleaning schedules, temperature logs, and opening/closing checklists.
• Identify and report damaged or unsafe serving items.
• Uphold safety, health, and food‑handling standards.
• Suggest new menu items based on trends and member requests.
• Attend department meetings and trainings.

Required profile

• Culinary degree or certificate strongly preferred.
• Minimum two years experience in high‑end sushi restaurants.
• Extensive knowledge of sushi preparation and fish handling.
• Ability to filet Bluefin Tuna, Yellowtail, and Salmon to executive standards.
• Understanding of occupational health and safety.
• Positive attitude, professional demeanor, and strong communication skills.
• Flexibility to work evenings, weekends, and holidays.
