About the role
The Meat Science Laboratory Technician supports the Cooperative Agricultural Research Center by processing beef, pork, and lamb carcasses and maintaining laboratory sanitation. This staff position is grant‑funded and works under general supervision.
Key responsibilities
- Assist in maintaining HACCP plans, SOPs, and food‑safety records.
- Conduct demonstrations for teaching, research, and extension programs.
- Maintain laboratory equipment and facilities.
- Package, store, and ship meat products.
- Fabricate carcasses into roasts, chops, steaks, sausages, ground meats, and value‑added products.
- Process carcasses from slaughter to cooler and produce cured or smoked items.
Required profile
- High School diploma or equivalent; combination of education and experience accepted.
- At least five years of related experience in the meat industry.
- Preferred: Bachelor’s degree in Animal Science, Food Science, or a related field.
Required skills
- Knowledge of Hazard Analysis and Critical Control Points (HACCP) procedures.
- Familiarity with Food Safety and Inspection Service (FSIS) regulations.
- Proficiency in meat processing techniques and equipment operation.
