Executive Chef

About the role

Hilton Philadelphia City Avenue, a 207-room hotel near the Bala Cynwyd Business District, is hiring an Executive Chef. The chef manages kitchen operations in line with guest service, food quality and sustainability standards, and can grow into the Director of Food & Beverage role.

Key responsibilities

• Manage kitchen operations and establish priorities, assigning production and preparation tasks to staff
• Interview, select, train, schedule, coach and support associates, and review daily menu specials, banquet orders and inventory
• Requisition and receive day's supplies, communicate with purchasing and storeroom, and check quality of products received
• Meet with the Executive Steward on equipment, banquet plate-up, cleaning schedules, and health, safety and sanitation
• Keep work areas stocked and ensure recipe cards, production schedules, plating guides and photography are current
• Ensure staff follows recipes and yield guides, develop new menu items, test recipes and observe guest reactions
• Walk through kitchens regularly, assist the catering department with special menus, and review sales and food cost daily
• Prepare weekly work schedules, follow the EarthView sustainability program, and follow MSDS and OSHA standards

Required profile

• Degree or certificate in Culinary Arts and/or one to two years' experience as an Executive Chef
• Expertise in food product, presentation, quality and preparation, and menu concept and design
• Schedule varies, including holidays and weekends; requires standing, walking, lifting up to 50 pounds and bending
