Director of Brewing Operations

About the role

The Director of Brewing Operations will lead the entire brewing, fermentation, packaging and logistics ecosystem for Mountains Walking Brewery and New Hokkaido Bevco. This senior position reports to the Founding CEO and works closely with sales, head brewer and other senior leaders to drive growth, innovation and operational excellence.

Key responsibilities

• Lead, mentor and develop brewing, QA, packaging, maintenance and support teams while fostering a collaborative culture.
• Set performance goals, cascade company objectives and conduct regular performance reviews.
• Collaborate with the CEO, Director of Sales and Head Brewer to define long‑term growth, production expansion and new product strategies.
• Oversee all brewing operations – brewing, fermentation, packaging, quality control and transportation – ensuring schedules, quality standards and customer service are met.
• Manage the full supply chain from ingredient sourcing to finished‑goods distribution, maintaining cost‑effectiveness and inventory levels.
• Develop and control the brewing operations budget, implement cost‑saving measures and track key performance indicators.
• Establish and maintain quality control, safety and regulatory compliance across the manufacturing network.

Required profile

• Proven leadership experience in brewing or beverage manufacturing environments.
• Strong strategic planning ability and experience driving production expansion projects.
• Expertise in supply‑chain management, budgeting and cost optimisation.
• Deep knowledge of quality assurance, safety standards and alcoholic beverage regulations.
• Excellent communication skills and ability to work cross‑functionally with senior leadership.
