Sushi Cook III – Luxury Resort

About the role

The Discovery Land Company is seeking an experienced Sushi Cook III to join the culinary team at Makena Golf & Beach Club on Maui. You will create high‑quality sushi and support food preparation for restaurants, comfort stations, and special events, contributing to an exceptional guest experience.

Key responsibilities

• Prepare appetizers, soups, salads, entrees, desserts, and sushi using established recipes.
• Maintain 100% food quality, follow plating standards, and meet timing requirements.
• Operate and maintain kitchen equipment such as mixing machines, steam cookers, toasters, food choppers, refrigerators, ovens, fryers, stoves, and kryovac machines.
• Ensure proper storage, rotation, labeling, and daily icing of fish.
• Assist with receiving deliveries, cleaning work areas, and reporting equipment issues.
• Expedite meals, control kitchen pace, and support fellow cooks and servers.

Required profile

• High school diploma, GED, or equivalent vocational training (preferred).
• Minimum 3 years sushi experience in fine‑dining, luxury resort, or private club settings.
• Ability to work all stations on the hot line and maintain a clean, safe workspace.
• Reliability in reporting shortages, adhering to safety practices, and arriving on schedule.
