About the role
The Meat Science Laboratory Technician works under general supervision to oversee the processing of beef, pork, and lamb carcasses and to maintain sanitation standards in the university’s meat laboratory. The position is grant‑funded and supports teaching, research, and extension activities.
Key responsibilities
- Assist in maintaining HACCP plans, SOPs, and food safety records.
- Conduct lab demonstrations for teaching, research, and extension programs.
- Maintain laboratory equipment and facilities.
- Package, store, and ship meat products.
- Fabricate carcasses into roasts, chops, steaks, sausages, ground meats, value‑added, cured, and smoked products.
- Process carcasses from slaughter to cooler.
- Perform other duties as assigned.
Required profile
- High school diploma or equivalent; combination of education and experience accepted.
- At least five years of related experience in the meat industry.
- Ability to multitask and work cooperatively.
Required skills
- Knowledge of Hazard Analysis and Critical Control Points (HACCP).
- Familiarity with Food Safety and Inspection Service (FSIS) procedures.
- Meat processing and equipment maintenance.
- Understanding of SOPs and food safety record keeping.
