Meat Lab Lead (Instructional Support Technician III)

About the role

The Fresno State University Agricultural Laboratory seeks a Meat Lab Lead to manage day‑to‑day operations of a USDA‑FSIS inspected slaughter and processing facility. Reporting to the Farm Operations Manager and working closely with the Meat Lab Enterprise Manager/Faculty, you will support both educational and commercial activities on a 1,000‑acre on‑campus farm.

Key responsibilities

• Oversee live animal handling, kill‑floor duties, carcass processing, and packaging of meat products.
• Ensure compliance with USDA‑FSIS regulations, food‑safety standards, and HACCP plans.
• Maintain inventory, track purchasing, and manage product flow to the Fresno Gibson Market and other sales venues.
• Supervise and mentor student employees working in the lab.
• Participate in meat‑related research projects and support curriculum delivery.

Required profile

• Experience in animal handling and meat processing within a regulated environment.
• Knowledge of USDA‑FSIS inspection requirements and HACCP principles.
• Ability to manage inventory, purchasing records, and documentation.
• Strong organizational skills and capacity to lead a student workforce.
