Finance Controller – Food & Beverage Business Partner

About the role

The Controller will join the Riviera Dining Group finance team, supporting a portfolio of luxury restaurant concepts across Florida. Working closely with corporate accountants, analysts, and venue leaders, you will influence profitability and growth through rigorous financial analysis and operational control.

Key responsibilities

• Maintain and interpret financial statements and supporting schedules, including balance sheet, income statement, and cash flow.
• Develop and manage annual budgets and financial forecasts in partnership with the Corporate Controller.
• Monitor complimentary items (comps) and voids daily to ensure they stay within approved thresholds.
• Analyze statistical and accounting data to assess operating results against budget and profitability targets.
• Establish and maintain inventory control systems, set par levels, and monitor stock usage.
• Coordinate with kitchen and bar teams to reduce waste, optimize ordering, and minimize spoilage.
• Partner with third‑party beverage counters for accurate inventory tracking and cost control.
• Track beverage cost trends, analyze variances, and ensure margins meet budgeted targets.
• Conduct profitability analysis of menu items using sales and cost data, and recommend enhancements to menus, pricing, and composition.

Required profile

• Strong understanding of financial statements and related schedules.
• Experience developing and managing budgets and forecasts.
• Ability to monitor and control complimentary items and voids.
• Proficiency in analyzing operating results and profitability.
• Knowledge of inventory control and waste reduction in a food‑and‑beverage environment.
• Capability to work collaboratively with kitchen, bar, and third‑party partners.
