Executive Sous Chef

About the role

The Executive Sous Chef supports the Executive Chef in the daily operations of the kitchen at the Palm Beach Marriott Singer Island Beach Resort & Spa in Riviera Beach, Florida. The role covers managing culinary and stewarding staff, maintaining food quality and consistency, and meeting financial and other objectives. The career path leads to Executive Chef and then Food and Beverage Director.

Key responsibilities

• Interview, select, train, schedule, coach and support associates so they meet brand and hotel standards.
• Oversee and direct food production in a timely and efficient way.
• Collaborate on new menu items and create and test recipes.
• Ensure food is prepared and served consistently according to recipes, portioning, cooking and serving standards.
• Hold others accountable for food safety, food handling and sanitation.
• Train staff on kitchen equipment, cooking methods, garnishes and portion sizing.
• Supervise the stewarding operation and maintain the kitchen to company standards for quality, service and cleanliness.
• Manage kitchen inventories of food, beverage, glass, china, supplies, chemicals, equipment and tools.
• Attend daily meetings (BEO, AM Stand Up, F&B) and hold departmental staff meetings regularly.
• Follow sustainability guidelines under the HHM EarthView program and comply with MSDS and OSHA standards.

Required profile

• Degree or certification from an accredited culinary program preferred.
• 3 years' experience in a managerial position in an upscale and/or high-volume foodservice establishment.
• Ability to work varied and extreme temperatures, including freezers (-10F) and hot kitchens (90F).
• Physical demands: standing for long periods, lifting up to 50 pounds, and working on holidays and weekends.
