Line Cook for Fine Dining Japanese Steakhouse

About the role

Our Michelin‑starred restaurant group is seeking an experienced Line Cook for our 50‑seat fine‑dining restaurant, Koshu Club. The Japanese‑inspired steakhouse, led by James Beard finalist and Michelin‑starred Executive Chef J. Trent Harris, showcases premium Japanese and American wagyu beef and pristine seafood, paired with a curated wine and sake list.

Key responsibilities

• Work under the direction of chefs to complete assigned daily tasks.
• Follow prep and recipe lists precisely and execute directions accurately.
• Oversee a designated station and ensure all items produced meet quality standards.
• Collaborate with back‑of‑house staff to maintain food quality and standards.
• Uphold cleanliness and proper operation of all equipment, reporting any malfunctions.
• Continuously improve personal skills by incorporating chef feedback.

Required profile

• Fine‑dining service experience preferred.
• Positive attitude, careful attention to detail, and sense of urgency.
• Strong communication skills and ability to work cleanly and efficiently.
• Punctual, energetic, organized, and ambitious.
• Team‑working skills with professional appearance and grooming.
• Fluent English; additional languages beneficial.
• Commitment to excellence and desire to learn.
