Culinary Externship – Seasonal Summer Position

About the role

The Culinary Externship is a seasonal summer position (April to September) at Dune Deck Beach Club, providing hands‑on experience in a high‑end food‑and‑beverage environment. Externs will support the Culinary Department while ensuring food safety and quality standards.

Key responsibilities

• Prepare menu items and daily specials according to specifications set by the Culinary Director or Executive Chef.
• Maintain kitchen cleanliness, perform light housekeeping, and manage stock and re‑stock of ingredients throughout the shift.
• Monitor food safety, inspect ingredients, and ensure compliance with all government, health, and safety regulations.
• Assist with chopping, butchering, sauce preparation, and other prep tasks across all kitchen stations.

Required profile

• Enrolled in an accredited Culinary or Hospitality program affiliated with Discovery Land Co.
• At least six months of back‑of‑house experience in a food‑service outlet.
• ServSafe certified and knowledgeable about health and safety regulations.
• Ability to work flexible rotating shifts, including evenings, weekends, and holidays, for shifts longer than eight hours.
