Assistant Bakery Operations Manager (Full‑time, Hourly)

About the role

Insomnia Cookies is seeking a full-time Assistant Bakery Operations Manager for its Sweetwater, FL location. The role is a leadership pipeline position that prepares you to become a Bakery Operations Manager by handling day-to-day bakery operations and developing team talent.

Key responsibilities

• Execute core bakery operations including inventory rotation, ordering, shrink control and adherence to food-safety and cleanliness standards.
• Support scheduling, labor execution and staffing coordination to meet operational targets.
• Assist in recruiting, interviewing, onboarding and training of new team members.
• Provide real-time coaching, performance feedback and hold staff accountable to standards.
• Manage bakery operations independently when the BOM is absent, ensuring continuity during staffing gaps.
• Partner with the BOM and area leadership to identify operational gaps and implement solutions.

Required profile

• At least 1 year of leadership experience in restaurant, retail or hospitality operations.
• Strong operational discipline with high attention to detail.
• Ability to coach, train and develop team members.
• Demonstrated accountability, urgency and a growth‑mindset culture.
