Sushi Chef

About the role

The Madison Club, part of Discovery Land Company, is seeking an experienced Sushi Chef to lead its sushi stations. You will create innovative menu items, maintain the highest quality standards, and help shape the overall culinary experience for members and guests.

Key responsibilities

• Develop and oversee daily sushi menu execution, ensuring compliance with food cost, inventory, portion, and quality targets.
• Perform regular spot checks on presentation and taste to guarantee consistent excellence.
• Research and introduce new menu items based on trends, local products, and member feedback.
• Hire, schedule, train, coach, and evaluate sushi cooks and assistants.
• Manage labor costs by aligning staffing levels with anticipated business volume.
• Control inventory, minimize waste, and adjust menu pricing in collaboration with senior chefs.
• Maintain a clean, safe kitchen environment and enforce HACCP and local food‑safety regulations.
• Coordinate with stewarding and ensure completion of cleaning schedules, temperature logs, and opening/closing checklists.

Required profile

• Proven experience leading a sushi station or similar culinary operation.
• Strong knowledge of local and imported seafood products.
• Demonstrated ability to hire, train, and develop culinary staff.
• Excellent organizational skills for inventory, scheduling, and cost control.
• Commitment to food safety, cleanliness, and high‑quality presentation.
