Sushi Chef

About the role

The Discovery Land Company is seeking a Sushi Chef for its Atlantic Fields location outside West Palm Beach, FL. You will lead the sushi stations, create innovative menu items, and ensure the highest standards of quality and service for members and guests.

Key responsibilities

• Create and oversee daily sushi menu execution, managing food cost, inventory, portion control, and service speed.
• Maintain top‑quality presentation and taste through regular spot checks.
• Research and develop new menu items based on trends, local products, and member requests.
• Hire, schedule, train, mentor, and evaluate sushi cooks and assistants.
• Plan staffing levels to match business volume while controlling labor costs.
• Train staff on sushi standards to ensure consistent execution.
• Manage inventory, minimize waste, and suggest ingredient modifications for profitability.
• Collaborate with senior chefs on ingredient quality, quantity, and pricing.
• Work closely with stewarding to keep kitchen areas clean and orderly.
• Enforce food safety, health, and HACCP standards, including temperature records and cleaning schedules.

Required profile

• Extensive knowledge of sushi preparation and a variety of local and imported products.
• Proven experience leading a culinary team, including hiring, training, and performance management.
• Strong organizational skills for scheduling, inventory control, and cost management.
• Commitment to maintaining a clean, safe, and compliant kitchen environment.

Required skills

• HACCP certification or demonstrated expertise in HACCP food safety protocols.
• Food safety management system implementation.
