Sushi Assistant

About the role

The Sushi Assistant supports the Sushi Chef in delivering high‑quality sushi dishes for guests while upholding the Discovery Land Company experience. This onsite position involves food preparation, quality control, and maintaining a clean, safe kitchen environment.

Key responsibilities

• Assist the Sushi Chef with preparation of fresh fish dishes and ensure consistent quality and presentation.
• Address member or guest concerns professionally and courteously.
• Conduct regular spot checks for menu accuracy, taste, and presentation.
• Monitor inventory levels, communicate needs, and minimize waste or contamination.
• Complete daily cleaning schedules, temperature logs, and opening/closing checklists.
• Identify and report damaged serving items; maintain equipment par levels.
• Enforce safety, health, and food‑handling standards throughout the work area.
• Research and propose new menu items based on trends, local products, and member feedback.
• Participate in department meetings, trainings, and any additional duties as assigned.

Required profile

• Culinary degree or certificate preferred.
• Minimum two years of experience in a high‑end sushi restaurant.
• Extensive knowledge of sushi preparation and cookery techniques.
• Possession of a California Food Handlers Card (or obtain within 7 days of hire).
• Positive attitude, professional demeanor, and strong communication skills.
• Flexibility to work evenings, weekends, holidays, and long shifts as needed.
• Ability to work effectively in a team and stay focused during busy periods.
• Fluent in English; additional languages are a plus.
