Sous Chef – A La Carte & Event Support

About the role

We are seeking an experienced Sous Chef to lead the execution of a‑la‑carte service and support on‑site programming for Constellation Brands. Reporting to Culinary and Hospitality leadership, you will ensure high‑quality guest experiences through precise timing, presentation, and consistent standards.

Key responsibilities

• Execute daily a‑la‑carte service, maintaining timing, presentation, and quality.
• Determine staffing needs, adjust labor, and lead kitchen teams by example.
• Mentor line and prep cooks, reinforcing standards and professional communication.
• Oversee prep, setup, breakdown, and post‑service resets to ensure organization and cleanliness.
• Maintain food safety, sanitation, and quality standards across all operations.
• Assist with inventory management, ordering, and cost control to minimize waste.
• Communicate with all departments to ensure smooth execution and consistent guest experiences.
• Support event and banquet operations during high‑volume periods and act as kitchen lead in the Chef De Cuisine’s absence.

Required profile

• Clear and effective communication skills.
• Physical ability to reach, bend, stoop, lift up to 40 lb and stand for long periods.
• Exceptional hygiene and grooming habits.
• Availability to work nights and flexible schedules.
