Lead Cook

About the role

The Maverick Golf and Ranch Club, part of Discovery Land Company, is seeking a Lead Cook to support its Food & Beverage Culinary Department. You will work alongside a talented team to create memorable dining experiences for members and guests, handling a variety of ingredients and cooking styles.

Key responsibilities

• Assist in daily and seasonal set‑up of the culinary program, preparing mise en place for assigned stations.
• Prepare menu items for all outlets according to Executive Chef recipes, ensuring quality and consistency.
• Cook food to established standards, monitor temperatures, and maintain food safety compliance.
• Manage inventory, stock and rotate supplies, and alert the Sous Chef of low items.
• Operate multiple stations (line, salad, prep) and control the flow of tickets during service.
• Perform vegetable prep, meat cutting, fish filleting, and handle deliveries.
• Maintain clean workstations and equipment throughout the shift.

Required profile

• High School diploma, GED or equivalent vocational training (preferred).
• Minimum 5 + years experience in high‑volume, upscale restaurants, luxury hotels, resorts or private clubs.
• Ability to work flexible hours, including evenings, weekends and holidays.
• Positive attitude, professional demeanor and strong communication skills.
• Team‑oriented, calm under pressure and able to read, write and speak English.

Required skills

• Proficiency in a wide range of cooking techniques.
• Knowledge of federal, state and local food safety and sanitation regulations.
• Food handler certification (or ability to obtain).
