Distiller – Whiskey Production (Full-time)

About the role

High West Distillery, part of Constellation Brands, is seeking a dedicated Distiller to manage all stages of new‑make whiskey production across its Park City and Wanship facilities. The role is full‑time on a 4‑day, 10‑hour schedule and includes occasional evening and weekend shifts after training.

Key responsibilities

• Handle and mill grain, operate mash tuns and manage wet/dry grain conveyance systems.
• Track raw material components and execute daily mashing operations via PLC‑controlled pumps, motors and valves.
• Manage fermentations, perform yeast propagation, and conduct laboratory analysis on daily batches.
• Operate a high‑pressure steam‑fed hybrid still with glycol cooling and perform new‑make spirit analysis.
• Run CIP cleaning procedures using strong acids and bases, and maintain aseptic sanitation of tanks, vessels and pipework.
• Perform detailed data and yield tracking, and conduct sensory evaluation of new‑make whiskey.

Required profile

• High School Diploma or GED.
• Ability to work 10‑hour shifts, including nights and weekends.
• Highly organized with strong multitasking abilities.
