Chef de Cuisine / Executive Chef

About the role

Discovery Land Company seeks a visionary Chef de Cuisine/Executive Chef to lead its culinary operations. You will shape menu concepts, uphold the highest food quality standards, and drive a culture of continuous improvement across the kitchen team.

Key responsibilities

• Collaborate with the VP of Culinary and F&B leaders to set exemplary culinary standards.
• Design and execute innovative menus that reflect local influences and premium ingredients.
• Oversee recruitment, training, evaluation, and development of all culinary staff.
• Manage daily procurement, inventory rotation, and ensure fresh product usage.
• Control product quality, minimize waste, and maintain consistent preparation procedures.
• Conduct cost analysis, menu pricing updates, and maintain a comprehensive recipe database.
• Coordinate with stewarding to manage equipment inventory, maintenance, and breakage reporting.
• Ensure compliance with cleaning schedules, temperature logs, and safety regulations.
• Address guest concerns promptly and maintain open communication with other departments.
• Generate operational reports and participate in necessary meetings.

Required profile

• Culinary degree or equivalent pedigree.
• 10+ years of experience as a chef in high‑end restaurants, resorts, or private clubs.
• Deep knowledge of best culinary practices and current food trends.
• Proven leadership and staff development abilities.
• Experience sourcing local ingredients and building supplier relationships.
