Bread Baker

About the role

Discovery Land Company’s Troubadour Golf & Field Club is looking for an experienced Bread Baker to join its Culinary Department. The baker will produce a wide variety of artisan breads, rolls, and specialty doughs from scratch to support multiple dining outlets, banquets, and member events.

Key responsibilities

• Prepare, mix, ferment, shape, proof, and bake artisan breads, including quick breads, laminated doughs, gluten‑free breads, focaccia, ciabatta, wheat breads, milk bread, burger buns, pizza dough, and seasonal specialties.
• Maintain consistent quality, appearance, texture, and flavor according to club standards.
• Manage daily production schedules to meet the needs of restaurants, events, and banquets.
• Monitor ingredient inventory, communicate ordering needs, and ensure a clean, sanitary bakery environment.
• Operate and maintain commercial bakery equipment safely.
• Collaborate with the Executive Pastry Chef and culinary leadership on new product development.

Required profile

• Minimum 3 years of professional experience in high‑volume bread production (bakery, luxury hotel, resort, restaurant, or private club).
• Culinary degree preferred but not required.
• Strong understanding of fermentation, hydration, dough development, proofing, and baking techniques.
• Ability to work early mornings, weekends, holidays, and special events.
• Physical ability to stand for long periods, lift up to 50 lb, and work in a hot, flour‑filled environment.
