Pastry Chef Assistant

About the role

The Pastry Chef Assistant supports the Pastry Chef in delivering innovative pastry, bakery, and dessert experiences for both casual and fine‑dining settings within the club. You will help maintain the Discovery Land Company standards while ensuring quality, consistency, and safety across all pastry operations.

Key responsibilities

• Collaborate with culinary and F&B leaders to uphold exemplary culinary standards.
• Maintain daily product quality control, cleaning schedules, temperature logs, and opening/closing checklists.
• Minimize waste and spoilage through consistent procedures.
• Assist the Pastry Chef in creating and implementing new menu ideas.
• Organize kitchen workflow efficiently to meet daily restaurant covers.
• Conduct regular inventory checks and monitor stock levels.
• Maintain and ensure proper handling of all kitchen equipment.
• Prepare pastry items according to standard recipes, checking taste, temperature, and visual appeal.
• Ensure uniform portion sizes and prevent use of contaminated products.
• Comply with all government, safety, health, and security standards.

Required profile

• At least one year of line cook, prep cook, or pastry cook experience in a world‑class resort, hotel, or club.
• Possession of a California Food Handlers Card (or ability to obtain within 7 days of hire).
• Culinary degree or formal training preferred.
• Positive attitude, professional demeanor, and strong communication skills.
• Flexibility to work evenings, weekends, holidays, and long hours as needed.
• Ability to work effectively in a team and stay calm during busy periods.
• Fluent in English; additional languages are a plus.
