Senior Catering Operations Manager

About the role

The Senior Catering Operations Manager leads all catering event operations for The Bartolotta Restaurants in the Greater Milwaukee area. This full‑time, on‑site position ensures flawless execution of events while driving operational consistency, financial performance, and team development.

Key responsibilities

• Provide leadership and oversight for all catering events, ensuring adherence to company standards.
• Establish processes and best practices to maintain consistency and excellence across events.
• Lead planning and execution of high‑profile, large‑scale, or complex events.
• Estimate food and beverage costs, collaborate with culinary and sales teams on menus, pricing, and service models.
• Maintain sales records, track cash receipts, and develop catering budgets with forecasting and profitability analysis.
• Oversee inventory management, purchasing, and vendor relationships for cost‑effective operations.
• Conduct regular inspections of catering spaces, equipment, and processes to ensure compliance and operational excellence.
• Evaluate equipment and facility needs, coordinating maintenance and improvements.
• Analyze sales, labor, and operational reports to identify growth opportunities.
• Ensure compliance with health, safety, food handling, sanitation, and alcohol service regulations.
• Lead, coach, and develop team members, fostering a culture of accountability and continuous improvement.
• Create team schedules to guarantee appropriate coverage.

Required profile

• Proven experience leading catering or food‑service operations.
• Strong financial acumen with experience managing budgets, cost control, and profitability analysis.
• Excellent organizational skills and ability to develop and implement standard operating procedures.
• Demonstrated ability to manage vendor relationships and inventory efficiently.
• Knowledge of health, safety, and alcohol service regulations.
• Leadership experience in coaching and developing teams.
